| Thanks Maggie for our very first great receipe! Quick, easy, tasty and lowfat burrito. Tortilla Rice Black Beans Salsa Cheese {low fat or "vegan cheese" would have the fewest calories, I think} Prepare a cup of rice, dunk in a can of drained black beans. Place your tortilla on a plate and spoon some of the rice/bean mix onto it in a line. Don't roll it up yet! Spoon some salsa ontop, sprinkle your cheese on, and pop it in the microwave. For larger {medium dinner plate sized} buritos, you're going to set the microwave at 1:15. For the smaller 'fajita tortillas', 1 min is fine. Let it cool for 1 min. There will be moisture under the tortilla, so you may want to either pick it up and let it 'air out' a bit, or just be careful not to tear the damp tortilla when rolling it up. Roll it up, and enjoy :) A cup of rice + can of beans usually lasts me about 10 or so burrito sized tortillas. Its a good source of protien, yummy with a kick of spice, not full of empty calories and so quick when you have got the rice/beans all set in some tupperware in the fridge! From Kelly - add a couple jalapeno peppers for some kick and I sometimes add lettuce so it seems like you are eating a bigger portion, without adding calories. |

| From me! Using fresh or tinned fruit. Divide fruit evenly into 4 or 5 little dessert dishes and make up some light jelly to pour over the top. Allow to set in fridge and then when you feel like snacking you will have some low fat, low carb treats. |

Here's a great low fat recipe which even the kids will wolf down (mine do) I found this on the Weight watchers message boards which is a great source of info & low fat recipes. Cheers! 2 Chicken breasts 1/2 pkt taco or burrito seasoning 1 jar salsa 4 tbs Weight Watchers sour cream Preheat oven to 180. Coat chicken with almost all of the seasoning mix and place in baking dish (make sure u give it a light spray to stop the chicken sticking!). Pour the jar of salsa over chicken, making sure that it all covered. Bake for approx 35 mins (cooking time varies depending on your oven and the thickness of the chicken). Place chicken on serving plates and mix the sour cream with the hot salsa in the baking dish until combined. Pour sauce over chicken. This would serve 2 adults. Mexican Rice Cook some Doongara Rice (low GI and you can never overcook), when cooled, spray oil in frypan and put in rice, minced garlic, leftover taco seasoning & red kidney beans. Mix away then add some chopped parsley. Serve with the mexican chicken. |
